NZ is at day 1 of our nationwide lockdown in an effort to overcome COVID-19. I don't know about you but I plan to spend alot of time trying out some new recipes over the next 4 weeks! Here is one of my fave slice recipes. I should also add- this freezes really well! So while we are all hunkering down in our homes it could pay to keep some of it out of sight- out of mind! if not- then you have been warned! It is very moreish...

Ingredients:
Base:
1 cup almonds soaked overnight rinsed and drained
1 cup oats
2 Tbsp coconut oil (melted)
1 c desiccated coconut
2 c dried apricots (soaked and drained)
1/2 lemon juice, flesh & zest
1/8 tsp salt
Icing:
1 c raw cashews soaked 1-2 hours
4 tbsp honey
4 Tbsp coconut oil melted
Juice of 1 lemon
INSTRUCTIONS
Blend base ingredients in your food processor until a sticky cookie dough type texture forms, then press mixture into a lined baking tray and put in the freezer.
Blend topping ingredients until super creamy.
Sprinkle with coconut, and put into freezer.
