Toasted muesli



Ingredients

4 cups wholegrain oats (these are the big chunky ones not the rolled oats)

1/2 cup coconut oil, melted

1/3 cup peanut butter, tahini, or other nut butter 1/3 cup pure maple syrup or honey 1 tsp salt 1 cup nuts e.g. walnuts/ almonds/ macadamias/ hazelnuts

1/2 cup seeds e.g. pumpkin or sunflower 2 cups toasted coconut flakes- (you can toast these by baking them raw coconut flakes in the oven with a spray of oil over them until golden, or toasting in a frying pan on a low heat)

1 1/2 cups roughly chopped apricots



Method


  1. Preheat oven to 180 fan bake

  2. Combine all ingredients EXCEPT for apricots and coconut

  3. Cover baking trays with baking paper

  4. Tip oaty mixture onto baking trays, spreading out evenly

  5. Bake for ~12-14 minutes until golden. It burns really easily so keep an eye on it from around 10 minutes and make sure to set an oven timer so that you don't forget about it!

  6. Remove from oven, leave to cool, then mix the dried fruit and coconut flakes through.

  7. Store in a sealed container or jar.
